Matcha Chia Seed Pudding

Serves: 3 servings
  • 3 cups almond milk, vanilla unsweetened
  • 10 Medjool dates, pitted
  • 2 tablespoons cocoa powder, unsweetened
  • ¼ teaspoon instant coffee
  • 2 tablespoons Numi Ceremonial Matcha
  • 1 cup chia seeds, divided
  1. Add the Medjool dates to a food processor and pulse until chopped.
  2. Add in the almond milk, ½ cup at first, and puree. Then add the remaining milk, and blend until the date milk is complete.
  3. Divide the milk into two small mixing bowls.
  4. In one, add the cocoa powder and instant coffee. In the other, add the ceremonial matcha powder. Whisk each one separately until the ingredients are incorporated.
  5. Take a ½ cup of the chia seeds and whisk about half of it into the chocolate mixture, adding more until you reach a consistency like that of pudding.
  6. Take the other ½ cup of chia, and do the same for the matcha.
  7. Using 8 ounce jars, layer the pudding. Chill for 30 minutes before serving.
