Cucumber & Herbed Butter Finger Sandwiches
Serves: 4 servings of 2 sandwiches each
  • 4 slices of soft white bread
  • about 1 cup of very thinly sliced cucumbers
  • 4 tablespoons of butter, softened
  • ½ teaspoons lemon zest
  • 2 tablespoons of chopped fresh herbs – I prefer parsley, thyme, and chives)
  1. Mix herbs and lemon zest thoroughly into softened butter. Spread two pieces of bread liberally with the butter mixture, then sandwich cucumber slices in the middle. Repeat, then remove crusts and cut each sandwich into quarters.
