Toast is really enjoying a moment in the healthy foodie community. Avocado toast, especially, has a devoted following for all sorts of delicious ingredients piled atop crunchy browned bread — a supercharged breakfast or snack.
For those of us who deal with gluten allergies or other ailments (or who have pledged to complete a Whole30 challenge this January), a second trend is on the rise — sweet potato toast! Though this funky variation is traditionally prepared by placing thick slices of sweet potato in one’s toaster to quickly roast the flesh, you can also roast your sweet potato “toast” slices in the oven, flipping every 5 minutes.
Sweet potato toast works well with both sweet and savory toppings. It might seem a bit weird at first to smear peanut butter and honey on a root vegetable, but give it a try and you might be surprised!
If I’m enjoying my “toast” for breakfast I like to pair it with a nice invigorating tea like Numi’s Breakfast Blend. If I’m having it for a snack, I like an herbal blend like the Rooibos Chai!

Smashed Bean
INGREDIENTS
- Cooked chickpeas or navy beans
- Olive oil
- Seasonings — garlic powder, salt, pepper, dried chives, etc. (I like a few shakes of this seasoning blend including shallots, chives, green peppercorn, dill weed, basil, tarragon, chervil and bay leaf.)
- Cucumber
DIRECTIONS
Mash about ¼ cup of cooked chickpeas or navy beans with a ½ tsp tsp olive oil and seasonings to taste. Spoon onto sweet potato slice and top with thinly sliced cucumber.
Avocado Spinach
INGREDIENTS
- Avocado
- Spinach
- Paprika
DIRECTIONS
Place a few leaves of fresh spinach on sweet potato slice and top with sliced avocado. Add a sprinkle of paprika and salt to taste!
Peanut Butter Banana
INGREDIENTS
- Peanut Butter
- Banana
- Cinnamon
- Honey (or alternative for vegan diets)
DIRECTIONS
Spread peanut butter on sweet potato slice. Top with sliced bananas, a drizzle of honey, and a sprinkle of cinnamon!
Maple Coconut Cream
INGREDIENTS
- Coconut Cream
- Maple syrup
- Raw pepitas (pumpkin seeds)
- Dried Cranberries
- Blackberries
DIRECTIONS
Mix ¼ cup coconut cream with a bit of maple syrup for sweetness. Spread onto sweet potato slice and top with pepitas, cranberries, and blackberries!
